A Tasting Victoria exclusive event with Chef Kristian Eligh and master bartender Jayce Kadyshuck

To our Tasting Victoria readers,

We’d like to welcome you to our first Tasting Victoia event. Come learn a new recipe from one of Canada’s most renowned chefs, Executive Chef Kristian Eligh from the TopTable Group. Chef Eligh is currently working on opening Victoria’s first TopTable restaurant and will be joined by Victoria Master Bartender Jayce Kadyschuk who will walk you through how to prepare a signature cocktail.

The live-stream cooking class will be hosted virtually on Wednesday, March 10 at 6:30pm over Zoom. The only thing you need is your kitchen, an appetite, the ingredients, and access to a computer or your phone to join in on the class.

The dish that you’ll be learning to prepare is Chicken ‘Saltimbocca’ with braised lentils, crispy prosciutto, radicchio, and a walnut vinaigrette, paired with a delicious cocktail.

How does this work?

The cost of registration is $15 per household. During registration, you may select an optional ingredients box (includes all ingredients for the prepared dish) from Whole Foods. Boxes can be picked up or delivered. The cost of an ingredients box is $58. Once registered, you will receive an email confirmation. This will include FAQ’s, so if you have questions please wait to ask them. One week before the event, you will receive a shopping list and recipe card for the dish and (optional) cocktail recipe, and your password-protected Zoom link to access the virtual event.

In partnership with Capital Daily, Whole Foods and The United Way of Greater Victoria, we look forward to hosting you to a truly rare and unforgettable experience from the comfort and safety of your own home. Partial proceeds of the event will be donated to the United Way of Greater Victoria for food security programs.

Kristian Eligh was born for the culinary world. His dream to train and work with leading chefs from around the world is evident in the Michelin-starred kitchens he’s staged in like The French Laundry, Jean-Georges, Perry Street, Blackbird and McCrady’s Restaurant.

His early days with Brentwood Bay Lodge and Spa, Diva at the Met, and Market by Jean- Georges prepared him for his most recent roles with both Browns Restaurant and Hawksworth Restaurant Groups. As Browns Restaurant’s Culinary Development Chef, Kristian oversaw creative development and menu engineering for the 64 locations across the country. As the Culinary Director for Hawksworth Restaurant Group, Kristian was integral in achieving such accolades as Vancouver Magazine’s Restaurant of the Year and Macleans Magazine’s Best Restaurant in Canada for the flagship, Hawksworth.

In addition to assisting with the concept and direction of Hawksworth’s sister venues, Bel Café and Nightingale, Kristian’s tenure with the Hawksworth Restaurant Group also included launching a partnership with Air Canada’s Business Class inflight service exclusively for its international passengers.

Kristian now returns to the kitchen as he joins Toptable Group as Executive Chef of an exciting Victoria restaurant project scheduled for opening later this year.

Jayce has been a proud member of the food & beverage industry throughout western Canada for over 20 years. In 2013, he moved west to Victoria to lean into professional cocktail bartending and take on the manager/head bartender position at Clive’s Classic Lounge in the Chateau Victoria. Over the seven years he spent behind the bar at Clive’s, he came known as one of the premier 'off the cuff’ bartenders in the city and secured three “Top Ten Worlds Best Hotel Bar” nominations (Tales of the Cocktail – Spirited Awards 2014, 2019, 2020) for Clive’s.

In 2020, like many in the industry, Jayce was offered an opportunity to pause and reflect with the temporary closure of many establishments due to COVID-19. Jayce has chosen to shift his cocktail leadership away from the hustle and late nights spent running cocktail bar and join the management team at Vessel Liquor in Oak Bay. In addition to his time with Vessel, he currently oversees the cocktail program for Agrius restaurant and continues to make delicious libations for family & friends served, of course, from a distance.

Jayce is also continuing to develop his side project – Roadtrip Cocktails, a cocktail catering company he started in 2019. Keep an eye out for this branch of his cocktail creativity when events become a part of life again.
